Air Fryer Salmon Bites (Print Version)

# Ingredients:

→ Salmon

01 - 1 pound salmon, cut into 1-inch cubes

→ Marinade

02 - 1 tablespoon low sodium soy sauce
03 - ½ teaspoon ground black pepper
04 - 1 teaspoon garlic powder
05 - 2 teaspoons olive oil

→ Creamy Garlic Sauce

06 - 2 tablespoons unsalted butter
07 - 4 cloves garlic, minced
08 - ¼ cup dry white wine
09 - 1 cup heavy cream
10 - ½ cup freshly grated Parmesan cheese
11 - 1 tablespoon fresh lemon juice
12 - 2 teaspoons cornstarch (optional)
13 - 2 tablespoons fresh parsley, chopped

# Instructions:

01 - Pat the salmon cubes dry with paper towels to promote crispiness. In a bowl, combine salmon, soy sauce, black pepper, garlic powder, and olive oil; toss to coat evenly. Spray the air fryer basket with cooking spray.
02 - Place the salmon pieces in the air fryer basket and cook at 390°F for 8 minutes, shaking or flipping halfway through to ensure even cooking.
03 - While the salmon cooks, melt butter in a small saucepan over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds. Pour in the white wine and cook until mostly reduced, approximately 1 minute.
04 - Lower heat to medium-low and stir in heavy cream. Bring to a simmer while stirring occasionally. Add Parmesan cheese and simmer until melted and sauce thickens. Stir in lemon juice and parsley. Optionally, mix lemon juice with cornstarch before adding to thicken the sauce further. Adjust seasoning with salt and pepper to taste.
05 - Plate the salmon bites and drizzle generously with the creamy garlic sauce. Accompany with steamed vegetables or your preferred grain for a balanced meal.

# Notes:

01 - For a lighter sauce, substitute half-and-half for heavy cream. Adjust cooking time depending on air fryer model and salmon cube size.
