05 - 1/2 teaspoon baking soda
06 - 1 teaspoon ground cinnamon
07 - 1/4 teaspoon ground nutmeg, optional
08 - 1/2 teaspoon salt
09 - 1/2 cup granulated sugar
10 - 1/4 cup brown sugar
11 - 1 large egg
12 - 1/4 cup unsweetened applesauce
13 - 2 tablespoons unsalted butter, melted (or coconut oil)

→ Optional Toppings

14 - Cinnamon sugar (1/4 cup granulated sugar mixed with 1 tablespoon ground cinnamon)
15 - Simple glaze (powdered sugar mixed with apple cider)

# Instructions:

01 - Simmer apple cider in a saucepan over medium heat until liquid reduces to 1/2 cup. Set aside to cool.
02 - In a large bowl, whisk together all-purpose flour, whole wheat flour, baking powder, baking soda, ground cinnamon, nutmeg, and salt.
03 - In a separate bowl, whisk together granulated sugar, brown sugar, egg, applesauce, melted butter, and the cooled reduced apple cider until smooth.
04 - Add wet ingredients to dry ingredients and stir until just combined. Do not overmix.
05 - Preheat oven to 350°F (175°C). Grease the donut pan thoroughly with butter or nonstick spray.
06 - Spoon batter evenly into the prepared pan, filling each cavity about two-thirds full.
07 - Place the pan in the oven and bake for 15 to 20 minutes or until a toothpick inserted comes out clean.
08 - Allow donuts to cool in the pan for 5 minutes, then transfer to a wire rack. Roll warm donuts in cinnamon sugar or drizzle with simple cider glaze if desired.

# Notes:

01 - For best texture, avoid overmixing the batter. Use fresh apple cider for robust flavor.
