01 -
Simmer apple cider in a saucepan over medium heat until liquid reduces to 1/2 cup. Set aside to cool.
02 -
In a large bowl, whisk together all-purpose flour, whole wheat flour, baking powder, baking soda, ground cinnamon, nutmeg, and salt.
03 -
In a separate bowl, whisk together granulated sugar, brown sugar, egg, applesauce, melted butter, and the cooled reduced apple cider until smooth.
04 -
Add wet ingredients to dry ingredients and stir until just combined. Do not overmix.
05 -
Preheat oven to 350°F (175°C). Grease the donut pan thoroughly with butter or nonstick spray.
06 -
Spoon batter evenly into the prepared pan, filling each cavity about two-thirds full.
07 -
Place the pan in the oven and bake for 15 to 20 minutes or until a toothpick inserted comes out clean.
08 -
Allow donuts to cool in the pan for 5 minutes, then transfer to a wire rack. Roll warm donuts in cinnamon sugar or drizzle with simple cider glaze if desired.
