05 - 1/2 teaspoon black pepper
06 - 1/2 teaspoon dried oregano
07 - 1/2 teaspoon cayenne pepper
08 - 1/2 teaspoon packed light brown sugar
09 - 1/4 teaspoon dried thyme

→ Steak Bites

10 - 1 1/2 pounds strip steak, sirloin, or ribeye
11 - 2 tablespoons vegetable oil, divided
12 - 3 tablespoons unsalted butter
13 - 5 cloves garlic, finely minced or grated
14 - Minced fresh parsley, for garnish

# Instructions:

01 - Slice the steak into approximately 2-inch pieces and place in a large mixing bowl.
02 - In a small bowl, combine smoked paprika, kosher salt, garlic powder, onion powder, black pepper, dried oregano, cayenne pepper, brown sugar, and dried thyme. Add the seasoning blend to the steak pieces and toss thoroughly to evenly coat.
03 - Heat a large heavy-bottomed skillet over medium-high heat for several minutes until faint wisps of smoke appear.
04 - Add 1 tablespoon of vegetable oil to the skillet and swirl to coat. Place half of the seasoned steak pieces in a single layer, ensuring the pan is not overcrowded. Sear undisturbed for 2 minutes, then turn and sear another 2 minutes until deeply browned. Remove to a plate. Repeat with remaining oil and steak.
05 - Reduce heat to medium-low. In the same skillet, add butter and let it melt. Add minced garlic and cook for about 30 seconds, stirring and scraping the skillet to release any browned bits.
06 - Turn off the heat. Return steak bites to the skillet and mix thoroughly to coat with the garlic butter. Serve immediately, garnished with fresh minced parsley.

# Notes:

01 - For smaller steak bites, cut the steak into 1-inch pieces and reduce cooking time slightly.
02 - The Cajun seasoning blend may be adjusted to suit individual heat preferences.
