01 -
Bring a large pot of salted water to a boil and cook rotini pasta according to package directions until al dente. Drain and set aside.
02 -
In a large skillet, heat olive oil over medium-high heat. Toss chicken pieces with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Add chicken to skillet and cook until golden and cooked through, about 6–7 minutes. Remove from skillet and set aside.
03 -
Melt butter in the same skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
04 -
Pour in chicken broth and heavy cream, bringing mixture to a gentle simmer.
05 -
Add mozzarella, Parmesan, and cheddar cheese, stirring continuously until sauce is smooth and cheeses are fully melted.
06 -
Return cooked rotini and chicken to the skillet. Toss to thoroughly coat all components in the Cajun garlic cheese sauce.
07 -
Allow to simmer for 2–3 minutes, blending flavors. Garnish generously with chopped parsley and serve hot, with additional cheese if desired.
