Chicken Parmesan Subs Dish (Print Version)

# Ingredients:

→ Chicken and Seasoning

01 - 4 chicken breasts, boneless and skinless, pounded to ¼ inch thickness
02 - Salt and pepper, to taste

03 - 1 cup all-purpose flour, for dredging
04 - 2 large eggs, beaten
05 - 2 cups panko breadcrumbs
06 - 1 teaspoon garlic powder
07 - 1 teaspoon onion powder
08 - 1 teaspoon Italian seasoning

→ Cooking and Assembly

09 - 4 tablespoons olive oil
10 - 4 sub rolls, split lengthwise
11 - 1 cup marinara sauce, plus more for dipping
12 - 8 slices mozzarella cheese
13 - ¼ cup Parmesan cheese, grated
14 - Fresh parsley, for garnish

# Instructions:

01 - Preheat the oven to 400°F (200°C).
02 - Season the chicken breasts with salt and pepper. Dredge each breast in flour, dip into beaten eggs, and coat with a mixture of panko breadcrumbs, garlic powder, onion powder, and Italian seasoning.
03 - Heat olive oil in a large skillet over medium-high heat. Fry the chicken until golden brown on both sides and cooked through, about 4 minutes per side. Set aside on a paper towel-lined plate.
04 - Place the sub rolls on a baking sheet. Spread a thin layer of marinara sauce on the bottom half of each roll. Place a fried chicken breast on top of the sauce on each roll. Spoon more marinara sauce over the chicken. Lay two slices of mozzarella cheese over the sauce on each sub, and sprinkle with Parmesan cheese.
05 - Transfer the baking sheet to the preheated oven and bake until the cheese is melted and bubbly, about 5-10 minutes.
06 - Garnish with parsley and serve hot with additional marinara sauce on the side for dipping.

01 - Pound your chicken evenly to ¼ inch for quicker cooking and better sandwich fit.
02 - Toast rolls before assembly to prevent them from getting soggy.
