Preheat oven to 190°C (375°F). Lightly grease a 23x33 cm (9x13-inch) baking dish.

Season chicken breasts on both sides with salt, black pepper, paprika, and onion powder. Heat olive oil in a large skillet over medium-high heat and sear the chicken for 2-3 minutes per side until lightly golden. Remove from heat.

In a medium mixing bowl, whisk together the softened cream cheese, sour cream, minced garlic, and a pinch of salt until smooth and well combined.

Arrange fresh spinach evenly in the prepared baking dish. Place the seared chicken breasts on top of the spinach. Spread the cream cheese mixture evenly over the chicken.

Sprinkle shredded mozzarella cheese evenly over the casserole. Bake for 25–30 minutes until the chicken is cooked through and the cheese is bubbling and golden.
