Cut off the stems and slice strawberries in half. Cut a small sliver off the back of each half so they sit upright. Use a melon baller to hollow out a small indent in each half.

In a medium mixing bowl, beat the heavy whipping cream until stiff peaks form, about 5 minutes.

In a separate bowl, mix softened cream cheese, sour cream, sugar, vanilla extract, and optional lemon juice with an electric mixer until smooth.

Fold the whipped cream into the cream cheese mixture until fully incorporated.

Fill a piping bag with the cream cheese mixture and pipe it onto each prepared strawberry half using a star tip.

Sprinkle graham cracker crumbs on top of the filled strawberries. Serve and enjoy.
