Deviled Strawberries Cheesecake Filling (Print Version)

# Ingredients:

01 - 18-24 large strawberries
02 - 1 cup heavy whipping cream
03 - 8 ounces cream cheese, softened
04 - 1/3 cup sour cream
05 - 2/3 cup white granulated sugar
06 - 1 tsp vanilla extract
07 - 1 tbsp fresh lemon juice (optional)
08 - 1/2 cup graham cracker crumbs

# Instructions:

01 - Cut off the stems and slice strawberries in half. Cut a small sliver off the back of each half so they sit upright. Use a melon baller to hollow out a small indent in each half.
02 - In a medium mixing bowl, beat the heavy whipping cream until stiff peaks form, about 5 minutes.
03 - In a separate bowl, mix softened cream cheese, sour cream, sugar, vanilla extract, and optional lemon juice with an electric mixer until smooth.
04 - Fold the whipped cream into the cream cheese mixture until fully incorporated.
05 - Fill a piping bag with the cream cheese mixture and pipe it onto each prepared strawberry half using a star tip.
06 - Sprinkle graham cracker crumbs on top of the filled strawberries. Serve and enjoy.

# Notes:

01 - To reduce carbs, replace the sugar with low-carb sweetener and omit graham crackers.
02 - Strawberries can be prepped a day in advance; store in an airtight container with a paper towel to maintain freshness.
03 - The cream cheese mixture can also be made a day ahead and stored in the refrigerator.
