08 - 1/2 teaspoon salt
09 - 1/4 teaspoon black pepper

# Instructions:

01 - Preheat oven to 400°F (200°C) and grease a standard muffin tin or baking sheet with cooking spray or oil.
02 - In a large bowl, thoroughly mix mashed potatoes, cheddar cheese, Parmesan cheese, egg, all-purpose flour, green onions, garlic powder, salt, and black pepper until fully incorporated.
03 - Using a tablespoon, scoop portions of the potato mixture and form each into a compact ball.
04 - Roll each potato ball in breadcrumbs or panko, ensuring all sides are evenly coated.
05 - Place coated balls into the prepared muffin tin cavities or arrange on the greased baking sheet with space between them.
06 - Lightly spray the tops of each puff with cooking spray or gently brush with additional oil.
07 - Transfer to the oven and bake for 20–25 minutes until the puffs are golden and crisp on the outside.
08 - Allow puffs to cool for several minutes before carefully removing. Serve warm, optionally with a dipping sauce.
