Using a tablespoon, scoop portions of the potato mixture and form each into a compact ball.

Roll each potato ball in breadcrumbs or panko, ensuring all sides are evenly coated.

Place coated balls into the prepared muffin tin cavities or arrange on the greased baking sheet with space between them.

Lightly spray the tops of each puff with cooking spray or gently brush with additional oil.
