Preheat the oven to 425 degrees Fahrenheit.

Wash the potatoes, leaving the skins on, and cut them into 1/3-inch wide sticks. Make sure to keep each fry the same length as the potato.

Place the fries in a large bowl filled with cold water and soak them for 10 to 15 minutes. Drain and dry them thoroughly.

Add the fries into a large mixing bowl and toss them with olive oil, salt, dried oregano, dried dill, black pepper, and garlic powder.

Line a baking sheet with parchment paper. Spread the potatoes out into an even layer.

Bake the fries for 15 minutes, then take them out of the oven and carefully flip them. Return the fries to the oven and bake for an additional 6 to 8 minutes, or until they are crisp and golden brown.

Transfer the baked fries to a serving plate. Sprinkle with finely chopped parsley, red onion, and crumbled feta cheese.

Serve with tzatziki, aioli, and/or lemon wedges. Greek fries are best served warm.
