Green Cake with Lime Frosting (Print Version)

# Ingredients:

→ For the Cake

01 - 2 large eggs, at room temperature
02 - 3/4 cup (180g) milk, at room temperature
03 - 1/3 cup (75g) vegetable oil
04 - 1/4 cup (60g) freshly squeezed lime juice
05 - 1 tablespoon lime zest
06 - 2 tablespoons (24g) lime-flavored gelatin powder
07 - 1 1/2 cups (180g) all-purpose flour
08 - 3/4 cup (150g) granulated sugar
09 - 2 teaspoons (8g) baking powder
10 - 1/4 teaspoon (1g) salt

→ For the Lime Frosting

11 - 1 1/3 cups (397g) sweetened condensed milk
12 - 1/3 cup (80g) freshly squeezed lime juice
13 - 1 tablespoon (12g) lime-flavored gelatin powder
14 - 2 tablespoons (30g) hot water

# Instructions:

01 - Line an 8-inch (20cm) square pan with parchment paper and set aside. Preheat the oven to 350°F (180°C) for about 5 minutes before baking.
02 - In a large bowl, whisk the eggs for 1 minute using a wire whisk. Add the milk, vegetable oil, lime juice, lime zest, and lime gelatin powder. Whisk until well combined.
03 - Sift the flour, sugar, baking powder, and salt over the wet mixture. Gently whisk until the batter is just combined and smooth. Avoid overmixing.
04 - Pour the batter into the prepared pan and bake for 30 minutes or until a toothpick inserted in the center comes out clean. Let the cake cool completely at room temperature.
05 - In a medium bowl, whisk the condensed milk and lime juice until combined. The mixture will thicken slightly due to the lime juice.
06 - Pour the hot water over the lime gelatin powder and stir until completely dissolved. Add the dissolved gelatin to the condensed milk mixture and stir well.
07 - Spread the lime frosting evenly over the cooled cake. Refrigerate for at least 2 hours before serving.

01 - Keep the cake refrigerated and remove it from the fridge about 20 minutes before serving for best texture.
