# Ingredients:

→ Cheese

01 - 8 low-moisture part-skim mozzarella cheese sticks

→ Meat

02 - 8 slices of deli ham, thinly sliced

→ Coating

03 - 1 cup panko breadcrumbs
04 - 1/4 cup grated Parmesan cheese
05 - 2 large eggs, beaten

→ Dipping Sauce

06 - 3 tablespoons mayonnaise
07 - 1 teaspoon Dijon mustard
08 - 1 teaspoon balsamic vinegar

→ Frying

09 - Vegetable oil for shallow frying

# Instructions:

01 - Wrap each mozzarella stick with one slice of ham, ensuring the cheese ends remain uncovered.
02 - Combine panko breadcrumbs and grated Parmesan cheese in a shallow dish; place the beaten eggs in a separate bowl.
03 - Dip each ham-wrapped mozzarella stick first into the beaten eggs, then roll thoroughly in the panko-Parmesan mixture to coat evenly.
04 - Whisk together mayonnaise, Dijon mustard, and balsamic vinegar in a small bowl; set aside.
05 - Pour vegetable oil into a skillet or pot with high sides, heating over medium heat until oil reaches approximately 175°C (350°F).
06 - Shallow fry coated sticks in hot oil, turning frequently to ensure even browning, for about 2 to 3 minutes or until crisp and golden; avoid overcooking to prevent cheese leakage.
07 - Remove fried sticks from oil and place on paper towels to drain excess oil; serve warm alongside the balsamic-Dijon mayo dipping sauce.

# Notes:

01 - For best results, use low-moisture mozzarella to minimize cheese oozing during frying.
02 - If preparing ahead, breaded sticks can be frozen for up to 2 months; increase frying time slightly when cooking from frozen.
03 - Shallow frying requires attentive monitoring to maintain oil temperature and prevent uneven browning.
