Repeat the whisking and cooking process with the remaining 4 eggs, forming a second folded square portion.

Slice each croissant horizontally in half. On the bottom half, layer a slice of ham, one folded egg portion, and a slice of cheese. Cover with the top half.

Line a baking sheet with parchment paper and arrange the assembled croissants evenly.
