Combine cherries and water in a medium saucepan. Bring to a boil, then reduce heat. Lightly mash cherries, partially cover with lid, and simmer for 15 minutes until cherries are softened.

Transfer cooked cherries and their juices to a blender. Add honey, lime zest, and lime juice. Blend until completely smooth.

Pour blended mixture through a fine mesh strainer to remove any solids. Refrigerate syrup until thoroughly chilled.

Fill each 225g glass with ice. Add 30g syrup per glass, top with club soda, stir, and garnish with fresh cherries and lime slices.

Fill a pitcher with ice. Add all prepared syrup, pour in 850g club soda, stir, and garnish with cherries and lime slices. Serve immediately over ice.

Store unused cherry syrup in an airtight container in the refrigerator for up to 1 week, or freeze for up to 1 month. Thaw syrup overnight in the refrigerator before use.
