Honey Sweetened Fresh Cherry Limeade (Print Version)

# Ingredients:

→ Syrup

01 - 175g pitted fresh sweet cherries
02 - 115g water
03 - 90g raw honey
04 - 2 teaspoons lime zest
05 - 55g freshly squeezed lime juice

→ Limeades

06 - 850g club soda
07 - Fresh cherries, for garnish
08 - Lime slices, for garnish

# Instructions:

01 - Combine cherries and water in a medium saucepan. Bring to a boil, then reduce heat. Lightly mash cherries, partially cover with lid, and simmer for 15 minutes until cherries are softened.
02 - Transfer cooked cherries and their juices to a blender. Add honey, lime zest, and lime juice. Blend until completely smooth.
03 - Pour blended mixture through a fine mesh strainer to remove any solids. Refrigerate syrup until thoroughly chilled.
04 - Fill each 225g glass with ice. Add 30g syrup per glass, top with club soda, stir, and garnish with fresh cherries and lime slices.
05 - Fill a pitcher with ice. Add all prepared syrup, pour in 850g club soda, stir, and garnish with cherries and lime slices. Serve immediately over ice.
06 - Store unused cherry syrup in an airtight container in the refrigerator for up to 1 week, or freeze for up to 1 month. Thaw syrup overnight in the refrigerator before use.

# Notes:

01 - For more concentrated cherry flavor, increase syrup per serving as desired.
02 - Limeade syrup can be prepared ahead and frozen for several months.
