01 - 3 tablespoons vegetable oil
02 - 1 yellow onion, chopped
03 - 1 pound lean ground beef
04 - 4 cloves garlic, minced
05 - 1 jalapeno, minced
06 - 1 tablespoon ground coriander
07 - 2 teaspoons garam masala
08 - 2 teaspoons cumin
09 - 1 teaspoon Kosher salt
10 - 1 teaspoon ground turmeric
11 - 1 teaspoon ground ginger
12 - 1/2 teaspoon cayenne pepper
13 - 28 ounces diced tomatoes, undrained
14 - 3 russet potatoes, peeled and diced into 1/2-inch cubes
15 - 1 cup frozen green peas

# Instructions:

01 - Add vegetable oil and chopped onion to a large pot over medium heat. Cook onions, stirring occasionally, for 6-8 minutes until translucent.
02 - Mix in ground coriander, garam masala, cumin, Kosher salt, turmeric, ground ginger, and cayenne pepper. Stir and cook for 1 minute to release the spices' aroma.
03 - Add the lean ground beef to the pot. Break it apart and stir occasionally, cooking for 6-8 minutes until fully browned.
04 - Incorporate minced garlic and minced jalapeno. Cook for 1 minute, stirring well.
05 - Add undrained diced tomatoes and diced potatoes to the pot. Stir thoroughly to combine.
06 - Bring the mixture to a simmer and cook for 10-12 minutes, or until the potatoes are tender.
07 - Stir in the frozen green peas, heat through, and serve immediately.
