Set oven temperature to 400°F (205°C).

In a skillet over medium-high heat, sauté ground Italian sausage and chopped onion until the meat is browned and onions are softened. Drain excess fat.

Remove skillet from heat and immediately mix in softened cream cheese until fully melted and incorporated.

Stir in ricotta cheese and grated parmesan cheese. Set filling aside to cool slightly.

On a parchment-lined baking sheet, form 8 even circles using the shredded mozzarella cheese.

Bake mozzarella circles for 6-8 minutes, or until the edges begin to turn golden and crisp.

Remove baking sheet from oven and let the cheese circles cool for 1 minute to firm up.

Place a portion of the prepared sausage filling along the center of each mozzarella circle.

Carefully fold the mozzarella over the filling to create roll ups. Allow to cool and crisp before serving.
