# Instructions:

01 - In a large plate, blend together flour, salt, black pepper, and Italian seasoning. In a small bowl, whisk eggs until homogenous. In another medium bowl, thoroughly mix breadcrumbs and grated Parmesan cheese.
02 - Slice zucchini into fries approximately 3 inches long. Dredge each piece in the flour mixture to coat evenly, dip in whisked eggs, allowing excess to drip off, and roll in the Parmesan breadcrumb mixture. Press gently to ensure coating adheres fully. Repeat process for all pieces.
03 - Mist the air fryer basket lightly with cooking oil spray. Arrange breaded zucchini fries in a single, non-overlapping layer. Lightly spray tops of fries with oil for maximum crispness. Set air fryer to 400°F (204°C) and cook for 9 minutes or until fries are golden and crisp.
