Pizza Soup with Sausage Pepperoni (Print Version)

# Ingredients:

01 - 1 tablespoon olive oil
02 - 1 pound Italian sausage, casings removed

→ Vegetables

03 - 1 medium onion, diced
04 - 1 medium green bell pepper, diced
05 - 2 garlic cloves, finely diced

→ Herbs and Seasoning

06 - 1 teaspoon dried oregano
07 - 1/2 teaspoon dried basil
08 - 1/2 teaspoon dried marjoram
09 - Salt and freshly ground black pepper, to taste

→ Tomato and Broth

10 - 1 can (14 ounces) crushed tomatoes
11 - 1 cup tomato sauce
12 - 1 teaspoon sugar
13 - 4 cups chicken stock

→ Meat and Finishing Touches

14 - 4 ounces pepperoni, quartered
15 - 6 to 8 fresh basil leaves, shredded
16 - 4 ounces mozzarella cheese, grated

# Instructions:

01 - Heat olive oil in a large pot over medium heat. Add Italian sausage, breaking it up with a spoon, and cook until browned.
02 - Add the diced onion and green bell pepper to the pot. Sauté until the vegetables are softened, about 3 to 4 minutes.
03 - Stir in the garlic, dried oregano, dried basil, and dried marjoram. Cook for 1 minute until fragrant.
04 - Add crushed tomatoes, tomato sauce, sugar, quartered pepperoni, and chicken stock. Mix thoroughly, bring to a boil, then reduce heat and simmer for 10 minutes.
05 - Stir in shredded fresh basil leaves and season with salt and freshly ground black pepper to taste.
06 - Ladle hot soup into bowls. Top each serving with grated mozzarella cheese and let it melt for a couple of minutes before serving.
