Combine chopped peaches, granulated sugar, and 475 milliliters water in a saucepan. Bring to a gentle boil, then reduce heat and simmer for 10 minutes until peaches soften and sugar dissolves.

Blend the peach mixture using an immersion blender or transfer to a blender until completely smooth.

Strain the peach puree through a fine mesh sieve into a pitcher, pressing with a spoon to extract maximum juice. Discard the remaining pulp and allow the syrup to cool fully.

Add freshly squeezed lemon juice and the remaining 1.1 liters of water to the cooled peach syrup. Stir well, taste, and adjust sweetness or tartness with additional sugar or lemon juice if desired.
