# Ingredients:

01 - 1 cup Arborio rice or short-grain rice
02 - 4 cups whole milk or a mix of milk and cream
03 - 1/2 cup granulated sugar
04 - 1/4 teaspoon salt
05 - 1 teaspoon vanilla extract
06 - 1/2 teaspoon ground cinnamon
07 - 1/4 teaspoon ground nutmeg
08 - 1/2 cup raisins or dried fruits of choice (optional)
09 - Zest of 1 lemon (optional)
10 - Fresh mint leaves for garnish (optional)

# Instructions:

01 - Place the Arborio or short-grain rice in a strainer and rinse under cold water until the water runs clear.
02 - In a large saucepan, combine the rinsed rice, whole milk, sugar, and salt. Stir to combine.
03 - Place the saucepan over medium heat. Bring the mixture to a gentle simmer, stirring occasionally to prevent sticking.
04 - Once at a simmer, reduce the heat to low. Stir in the vanilla extract, ground cinnamon, and ground nutmeg.
05 - Continue to cook for about 30-35 minutes, stirring frequently. The rice should be tender, and the mixture should thicken to a creamy consistency.
06 - If desired, add raisins or any dried fruits during the last 10 minutes of cooking. Stir gently to combine.
07 - For an extra zing, grate the lemon zest into the pudding just before removing it from heat.
08 - Once cooked to your liking, remove the saucepan from heat. If you prefer it warm, serve immediately in bowls. If you want it chilled, let it cool at room temperature before refrigerating for at least 10-15 minutes.
09 - Before serving, sprinkle with additional cinnamon and garnish with fresh mint leaves, if desired.
