Peel the pineapple, remove the core, and cut it into uniform spears.

Combine honey, lime juice, and ground cinnamon in a large zip-top bag or non-reactive container. Add pineapple spears and toss to coat thoroughly. Seal and refrigerate for at least 30 minutes, or up to overnight for deeper flavor.

Adjust oven rack to the top or second-highest position. Preheat broiler on high. Line a large baking tray with aluminum foil for ease of cleanup.

If desired, melt butter and stir in granulated sugar until dissolved to form a glaze.

Remove marinated pineapple spears from the bag, shaking off excess marinade. Arrange spears in a single layer on the prepared tray. Brush all sides with the optional butter-sugar glaze, if using.

Broil for 8–10 minutes, turning once, until the pineapple is caramelized and edges are golden. Monitor closely to prevent burning.

Transfer the caramelized pineapple to a serving platter while warm. Top with additional honey or a sprinkle of cinnamon, if desired.
