Season chicken tenders with salt and pepper. Grill, bake, or fry until golden and cooked through, approximately 5 to 7 minutes per side. Set aside.

Combine mayonnaise, Dijon mustard, honey, salt, and pepper in a small bowl. Stir until smooth and well blended.

Lightly toast hoagie rolls or buns in a skillet or oven for 2 to 3 minutes until edges turn crispy.

Spread the honey mustard sauce evenly on the bottom half of each roll. Place a cooked chicken tender on top and drizzle with South Carolina mustard BBQ sauce.

Layer shredded lettuce or coleslaw, sliced red onions, and chopped pickles over the chicken. Add hot sauce if desired. Cover with the top half of the roll and serve immediately while warm.
