Square off the ends of the potatoes and cut into 3/4-inch to 1-inch slices.

Preheat the oven to 475 degrees Fahrenheit.

Heat a large cast iron pan over medium-high heat. Add the oil and half the melted butter. Place the potato slices in a single layer in the pan. Season with salt and pepper. Sauté for 5 minutes to brown the bottoms.

Remove the pan from heat and flip each potato slice over.

Mix the honey and cayenne pepper with the remaining butter. Pour this mixture over the potatoes.

Place the pan in the oven and bake for 15 minutes.

Remove the pan from the oven. Flip the potato slices over. Pour chicken broth into the pan to reach about 3/4 of the way up the potatoes. Add the smashed garlic.

Return the pan to the oven and bake for an additional 15 minutes.

Spoon the liquid over the potatoes before serving. Add additional salt and pepper if desired.
