Spicy Melting Potatoes (Print Version)

# Ingredients:

01 - 8 tablespoons salted butter, melted
02 - 3 pounds Yukon Gold potatoes, peeled
03 - Salt to taste
04 - Pepper to taste
05 - 1/2 to 1 cup chicken broth
06 - 1 teaspoon honey
07 - 1/2 teaspoon cayenne pepper
08 - 2 tablespoons olive oil or vegetable oil
09 - 2 cloves garlic, smashed

# Instructions:

01 - Square off the ends of the potatoes and cut into 3/4-inch to 1-inch slices.
02 - Preheat the oven to 475 degrees Fahrenheit.
03 - Heat a large cast iron pan over medium-high heat. Add the oil and half the melted butter. Place the potato slices in a single layer in the pan. Season with salt and pepper. Sauté for 5 minutes to brown the bottoms.
04 - Remove the pan from heat and flip each potato slice over.
05 - Mix the honey and cayenne pepper with the remaining butter. Pour this mixture over the potatoes.
06 - Place the pan in the oven and bake for 15 minutes.
07 - Remove the pan from the oven. Flip the potato slices over. Pour chicken broth into the pan to reach about 3/4 of the way up the potatoes. Add the smashed garlic.
08 - Return the pan to the oven and bake for an additional 15 minutes.
09 - Spoon the liquid over the potatoes before serving. Add additional salt and pepper if desired.

01 - You can substitute beef broth for chicken broth.
