In a medium bowl, whisk together eggs, cottage cheese, salt, pepper, and garlic powder until smooth.

Fold shredded cheese and diced vegetables into the egg mixture until evenly combined.

Pour mixture into greased muffin tin cups, filling each approximately three-quarters full.

Bake in preheated oven for 20 to 25 minutes until edges are set and tops puff slightly.

Remove from oven and allow to cool in the tin for 5 minutes.
