Using a hand mixer, whip together heavy cream, powdered sugar, and vanilla extract in a medium bowl until light peaks form. Refrigerate until needed.

In a blender, combine halved strawberries, ice cubes, clear rum, simple syrup, and peach schnapps. Blend on high speed until the mixture is completely smooth.

Remove whipped cream from the refrigerator. In serving glasses, layer the strawberry daiquiri mixture by filling approximately one third of each glass, then add a scoop of whipped cream. Repeat alternating layers until each glass is full.
