Combine water and sugar in a heatproof container. Microwave for 90 seconds, then stir until the sugar is fully dissolved. Cool the syrup completely in the refrigerator.

Place lemon juice and strawberries in a blender. Puree on high speed until completely smooth.

Transfer strawberry-lemon mixture to a large jug. Stir in the coconut water, then add cooled simple syrup to taste (begin with 60 ml, increasing as needed based on sweetness preference).

Refrigerate the lemonade until thoroughly chilled. Pour over ice in serving glasses. Optionally, top with sparkling water immediately before serving.
