Easy Caramel Cookie Chocolate Bites (Print Version)

# Ingredients:

01 - 72 MINI Nilla Wafer cookies (can use regular sized as well)
02 - 1 7-ounce bag of Rolos, unwrapped
03 - 8 ounces chocolate chips or melting chocolate wafers
04 - 1 teaspoon coconut oil (optional to add with chocolate chips when melting)

# Instructions:

01 - Preheat your oven to 300 degrees
02 - Place 36 mini Nilla wafer cookies onto a baking sheet lined with parchment paper
03 - Place a Rolo candy in the center of each cookie
04 - Heat in oven for 90 seconds. DO NOT heat longer than 90 seconds - you want the Rolo only slightly soft
05 - Remove from the oven and place another cookie on top of each Rolo candy. Do not squish the Rolo, just add a cookie on top and slightly press down
06 - Immediately chill the tray of cookies in the refrigerator for 15-20 minutes, or until chocolate has set
07 - Melt chocolate in a double boiler or in the microwave. If using chocolate chips, you can add a teaspoon of coconut oil to thin them out if desired
08 - Dip cookie sandwiches into chocolate using a chocolate dipper tool or fork. Tap against the side of the bowl to allow excess chocolate to drip off before transferring back to the baking sheet
09 - Refrigerate cookies until the chocolate has hardened

# Notes:

01 - Store in an airtight container for up to 2 weeks
02 - If using regular-sized Nilla wafers you may need more chocolate
03 - Do not heat Rolos longer than 90 seconds - they should be just slightly soft
04 - Coconut oil helps thin chocolate chips for easier dipping
