4th July Cake Roll (Print Version)

Fluffy cake roll layered with whipped cream, fresh strawberries, and blueberries for a festive summer treat.

# Ingredients:

Cake Base

01 - 4 large eggs, separated
02 - 3/4 cup granulated sugar, divided
03 - 1 teaspoon vanilla extract
04 - 1/2 cup all-purpose flour
05 - 1/4 teaspoon salt
06 - 1/2 teaspoon baking powder

Filling and Topping

07 - 1 cup heavy whipping cream
08 - 2 tablespoons powdered sugar
09 - 1/2 teaspoon vanilla extract
10 - 1/2 cup fresh strawberries, sliced
11 - 1/2 cup fresh blueberries

# Instructions:

01 - Preheat the oven to 350°F (175°C). Line a 10x15 inch jelly roll pan with parchment paper and lightly grease it.
02 - Beat the egg yolks with 1/2 cup granulated sugar in a large bowl until the mixture is thick and pale. Stir in the vanilla extract.
03 - Sift together the flour, salt, and baking powder in a separate bowl.
04 - Gently fold the sifted dry ingredients into the egg yolk mixture until just combined.
05 - In a clean bowl, beat the egg whites until soft peaks form. Gradually add the remaining 1/4 cup granulated sugar and continue beating until stiff peaks form.
06 - Carefully fold the beaten egg whites into the batter in three additions, maintaining the volume to keep the batter light.
07 - Pour the batter evenly into the prepared pan and spread gently. Bake for 12 to 15 minutes, or until the cake springs back when lightly touched.
08 - Place a clean kitchen towel on the counter and dust it generously with powdered sugar while the cake bakes.
09 - Immediately after baking, loosen the edges of the cake with a knife and invert it onto the prepared towel. Carefully peel off the parchment paper and roll the cake up in the towel from the short end. Allow it to cool completely.
10 - In a chilled bowl, whip the heavy cream with the powdered sugar and vanilla extract until stiff peaks form.
11 - Unroll the cooled cake gently and spread the whipped cream evenly over the surface. Arrange the sliced strawberries and blueberries evenly on top of the cream.
12 - Roll the cake back up without the towel, wrap it tightly in plastic wrap, and refrigerate for at least 1 hour before serving.

# Notes:

01 - Dusting the towel with powdered sugar prevents the cake from sticking during rolling.
02 - Ensuring egg whites are whipped to stiff peaks adds volume and results in a light texture.
