# Ingredients:

→ Fritter Batter

01 - Nonstick cooking spray, for greasing
02 - 190 grams all-purpose flour
03 - 2 teaspoons baking powder
04 - 0.5 teaspoon kosher salt
05 - 2 teaspoons ground cinnamon
06 - 57 grams unsalted butter, melted
07 - 50 grams granulated sugar
08 - 1 large egg
09 - 0.5 teaspoon vanilla extract
10 - 120 milliliters unsweetened applesauce
11 - 240 grams Honeycrisp apples, peeled and finely diced (approximately 2 medium apples)

→ Apple Glaze

12 - 240 grams powdered sugar
13 - 100 milliliters apple cider or apple juice

# Instructions:

01 - Preheat the oven to 200°C. Coat a baking sheet with nonstick cooking spray.
02 - In a medium bowl, whisk together flour, baking powder, salt, and cinnamon until homogenous.
03 - In a large bowl, whisk melted butter and granulated sugar. Incorporate egg thoroughly, then blend in vanilla extract and applesauce until smooth.
04 - Add the dry mixture to the wet ingredients and mix until a cohesive batter forms. Gently fold in diced apples until evenly distributed.
05 - Scoop 1 tablespoon portions of batter onto the prepared baking sheet, spacing mounds several centimeters apart. Bake for 10 minutes, then remove from oven. Switch oven to broil on high setting.
06 - While baking, combine powdered sugar with apple cider or apple juice in a small bowl. Whisk until a thin glaze forms.
07 - Brush each baked fritter bite with glaze, allowing excess to drip down the sides. Return tray to the oven and broil for 2-4 minutes, rotating the sheet every minute to ensure even caramelization. Observe closely to prevent burning.
08 - Brush fritters with the remaining glaze. Let stand on the baking sheet for about 15 minutes, or until the glaze hardens.

# Notes:

01 - For advanced preparation, store cooled bites in an airtight container up to 2 days at room temperature or 1 week refrigerated. Reheat for best texture.
