Apple Fritter Loaf (Print Version)

# Ingredients:

→ Apple bread stuff

01 - Spray to grease the loaf pan
02 - 2 peeled and diced apples
03 - 2/3 cup (134 g) white sugar plus 2 tbsp to toss apples
04 - 1/2 cup (113 g) softened unsalted butter
05 - 2 eggs, large
06 - 1 1/2 tsp vanilla
07 - 1 1/2 cups (190 g) plain flour
08 - 1 3/4 tsp baking powder
09 - 1/2 cup (120 ml) milk or almond milk, plus a few tbsp to drizzle
10 - Salt to taste

→ Cinnamon sugar mix

11 - 1/3 cup (67 g) light brown sugar
12 - 2 tsp cinnamon

→ Glaze mix

13 - 1/2 cup (60 g) icing sugar

# Instructions:

01 - Turn oven on to 175°C. Spray your 23 x 13 cm loaf pan well.
02 - Mix brown sugar with cinnamon in a small bowl. Toss apple pieces with 2 tbsp white sugar and set both aside.
03 - In a big bowl, beat butter with sugar till it’s light and fluffy. Add eggs one by one and mix good each time. Pour in vanilla and stir.
04 - In another bowl, whisk together flour, baking powder, and a pinch of salt.
05 - Add dry mix and milk to the butter mix little by little. Start and finish with the dry mix. Stir just till everything’s combined.
06 - Put half the batter in the pan. Sprinkle half the cinnamon sugar on top then add half the apples. Do it again with the rest.
07 - Pop the pan in the oven and bake for 50 to 60 mins. Stick a toothpick in the center to check—if it comes out clean, it’s done.
08 - Leave bread in the pan for 10 minutes to cool, then move to a rack. Mix icing sugar with a few tbsp milk to make a drizzle. Pour the glaze over once the bread’s cold.
09 - Cut into slices and enjoy it as a sweet treat.

# Notes:

01 - Make sure the loaf is totally cool before you add the glaze or it might melt.
