01 -
Chill the all-purpose cream overnight in the refrigerator or for 30 minutes in the freezer.
02 -
In a saucepan over medium heat, combine sugar and water. Stir until sugar dissolves and the mixture begins to bubble. Remove from heat and let cool.
03 -
Cut one avocado in half lengthwise, twist halves apart, and remove the pit. Peel and cube the flesh. Place in a blender or food processor.
04 -
Blend the cubed avocado until smooth. Add half of the condensed milk and pulse until well incorporated. Set aside.
05 -
Slice the remaining avocado halves thinly. Submerge slices in cold water to prevent browning while assembling.
06 -
Transfer chilled all-purpose cream to a large bowl and whip with a hand mixer until it doubles in volume. Gradually add the remaining condensed milk while continuing to whip.
07 -
Fold the avocado puree into the whipped cream mixture while beating continuously until fully blended.
08 -
Line the bottom of a sturdy 20x20 cm (8x8 inch) or 15x15 cm (6x6 inch) glass dish with a single layer of Graham crackers. Brush evenly with the sugar syrup to soften. Spread ¼ of the cream mixture over the crackers, then arrange avocado slices atop and brush with syrup to prevent browning.
09 -
Repeat layering crackers, syrup, cream mixture, and avocado slices two more times, finishing with a cream layer on top. Optionally, garnish the final layer with crushed Graham crackers or avocado slices brushed with fruit glaze or jelly.
10 -
Refrigerate the assembled dessert for at least 3–5 hours until set and the Graham crackers become soft and fluffy. Alternatively, freeze before serving if desired.
11 -
Combine 1 tablespoon light fruit jam or jelly (apricot or orange) with 2–3 tablespoons water. Heat briefly until melted, then cool before brushing on avocado slices to preserve color.
