Bacon Cheesy Christmas Cob Loaf (Print Version)

# Ingredients:

01 - 1 large cob loaf
02 - Extra bread chunks from the cob, crackers, or vegetable sticks for dipping

03 - 250 grams chopped bacon rashers
04 - 250 grams cream cheese, softened
05 - 120 grams sour cream
06 - 80 grams whole-egg mayonnaise
07 - 100 grams grated tasty cheese
08 - 100 grams grated mozzarella cheese
09 - 50 grams grated Parmesan cheese
10 - 1 teaspoon garlic powder
11 - ½ teaspoon onion powder
12 - 1 teaspoon Dijon mustard
13 - 2 tablespoons finely chopped fresh chives or spring onion
14 - Salt and freshly cracked black pepper, to taste

# Instructions:

01 - Preheat oven to 180°C fan-forced (200°C conventional). Using a serrated knife, cut the top from the cob loaf and hollow out the centre, leaving 2 to 3 cm of bread for a sturdy bowl. Cut removed bread into bite-sized chunks. Wrap the cob lid and bread chunks loosely in foil and set aside.
02 - Heat a frying pan over medium heat. Add chopped bacon and cook, stirring occasionally, until golden and crispy. Transfer bacon to paper towel to drain and cool slightly.
03 - In a large bowl, beat together cream cheese, sour cream, and mayonnaise until smooth, creamy, and free of lumps.
04 - Stir garlic powder, onion powder, Dijon mustard, salt, and cracked black pepper into the creamy base. Adjust seasoning to taste.
05 - Fold grated tasty cheese, mozzarella, Parmesan, cooked bacon, and chopped chives or spring onion into the creamy mixture until evenly distributed.
06 - Spoon the bacon and cheese mixture into the hollowed cob loaf, pressing gently to fill edges evenly. Place filled loaf on a lined baking tray.
07 - Cover the cob loaf loosely with foil and bake for 20 minutes. Remove foil and bake for an additional 15 to 20 minutes until cheese is melted, dip is bubbling, and top is lightly golden. During last 10 minutes, add bread chunks to oven and toast lightly.
08 - Remove from oven and let rest for 5 minutes. Garnish with extra chives or cracked pepper if desired. Serve immediately while hot and creamy.
