Sweet & Spicy Bacon Chicken Bites (Print Version)

# Ingredients:

→ For the Chicken Bites

01 - 2 chicken breasts, boneless and skinless, cut into 1-1.5 inch cubes
02 - ¾ cup light brown sugar, lightly packed
03 - 1 teaspoon garlic powder
04 - ½ teaspoon onion powder
05 - 1 teaspoon fresh rosemary, minced
06 - 1 teaspoon paprika
07 - ¼ teaspoon cayenne pepper, or to taste
08 - ½ teaspoon salt, or to taste
09 - ¼ teaspoon pepper, or to taste
10 - 12-15 slices bacon, thin cut, cut into halves or thirds
11 - 1 tablespoon parsley, for garnish

→ For the Honey Mustard Dip

12 - ½ cup mayo
13 - 2 tablespoons whole grain mustard
14 - 2 tablespoons Dijon mustard
15 - ⅓ cup honey
16 - ½ teaspoon garlic powder (optional)
17 - ¼ teaspoon cayenne pepper (optional)

# Instructions:

01 - Preheat the oven to 400°F. Spray a cooking rack with nonstick spray
02 - In a bowl, stir together brown sugar, garlic powder, onion powder, rosemary, cayenne pepper, paprika, salt, and pepper
03 - Add chicken pieces to the seasoning mix and toss to coat thoroughly
04 - Wrap each seasoned chicken piece in a strip of bacon. Insert a toothpick through to secure
05 - Place wrapped chicken bites on a wire rack. Set the rack on a foil-lined baking tray
06 - Bake for 15-20 minutes until bacon is crispy and chicken is cooked through
07 - Mix together all honey mustard dip ingredients in a bowl
08 - Garnish chicken bites with fresh parsley and serve with honey mustard dipping sauce

# Notes:

01 - Can be prepared ahead and refrigerated before baking
02 - For crispier bacon, place under broiler for 1-2 minutes at end
03 - Adjust cayenne to your preferred spice level
