Healthier apple breakfast treats (Print Version)

# Ingredients:

→ For the Fritters

01 - 2 cups all-purpose flour
02 - 1/3 cup granulated sugar
03 - 2 teaspoons baking powder
04 - 1/2 teaspoon salt
05 - 1 teaspoon ground cinnamon
06 - 1/4 teaspoon ground nutmeg
07 - 2 large eggs
08 - 1/2 cup whole milk
09 - 2 teaspoons vanilla extract
10 - 2 tablespoons unsalted butter, melted
11 - 1 1/2 cups diced apples (Granny Smith or Honeycrisp recommended)

→ For the Glaze

12 - 1 cup powdered sugar
13 - 2-3 tablespoons milk
14 - 1/2 teaspoon vanilla extract

# Instructions:

01 - Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
02 - In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
03 - In another bowl, whisk together the eggs, milk, vanilla extract, and melted butter until smooth.
04 - Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Gently fold in the diced apples.
05 - Scoop heaping spoonfuls of batter onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 14-16 minutes, or until the fritters are golden brown and a toothpick inserted into the center comes out clean.
06 - While the fritters cool slightly, whisk together the powdered sugar, milk, and vanilla extract until smooth.
07 - Drizzle or brush the glaze over the warm fritters. Allow the glaze to set for a few minutes before serving.

# Notes:

01 - Store leftovers in an airtight container for up to 3 days. Warm in the microwave for a fresh-from-the-oven taste!
02 - For an extra crunch, add chopped walnuts or pecans to the batter.
03 - Adjust the glaze consistency by adding more milk (thinner) or powdered sugar (thicker).
