10 - 1 teaspoon pure vanilla extract
11 - 1 1/2 cups fresh or frozen blueberries

→ Vanilla Glaze

12 - 1 cup powdered sugar
13 - 1-2 tablespoons milk or heavy cream
14 - 1/2 teaspoon pure vanilla extract
15 - Pinch of lemon zest (optional)

# Instructions:

01 - Preheat oven to 375°F (190°C) and grease a mini muffin tin.
02 - Whisk together flour, baking powder, baking soda, salt, cinnamon, and sugar in a large bowl.
03 - In a separate bowl, beat eggs, milk, melted butter, and vanilla extract until blended.
04 - Pour wet mixture into dry ingredients and stir gently until just combined to avoid toughness.
05 - Fold in blueberries carefully to maintain their shape.
06 - Spoon batter into greased mini muffin cups, filling each about three-quarters full.
07 - Bake for 15 to 18 minutes until golden brown and a toothpick inserted comes out clean.
08 - Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
09 - Whisk powdered sugar, vanilla extract, lemon zest (if using), and milk or cream until smooth.
10 - Drizzle or dip the cooled fritter bites in the glaze.
11 - Let glazed bites sit for 10 minutes to allow the glaze to firm up.

# Notes:

01 - Use fresh blueberries for optimal flavor. Avoid overmixing batter to maintain lightness. Ensure fritter bites are fully cooled before glazing to prevent melting.
02 - Optional: Add a pinch of lemon zest to the batter or glaze for a subtle citrus note.
