01 - 4 medium potatoes, diced
02 - 1 lemon, zested and juiced

# Instructions:

01 - Set the oven to 400°F (200°C) to prepare for baking.
02 - In a baking dish, combine diced potatoes, olive oil, lemon zest, lemon juice, fresh thyme, salt, and pepper. Toss until evenly coated.
03 - Crumble the feta cheese evenly over the potato mixture.
