Lemon Garlic Baked Tilapia (Print Version)

# Ingredients:

→ Main Ingredients

01 - 4 large tilapia fillets
02 - 1 large onion, thick sliced
03 - 2 cups peppers, cut into medium thick strips

→ For the Lemon Garlic Sauce

04 - ¼ cup melted unsalted butter
05 - 2 teaspoons minced garlic
06 - ¾ teaspoon salt
07 - ¼ teaspoon pepper
08 - 2 teaspoons Italian seasoning (or mixed dry herbs)
09 - 1 teaspoon smoked paprika (or regular paprika)
10 - ½ teaspoon onion powder (optional)
11 - 2 tablespoons fresh lemon juice
12 - 3-4 fresh lemon slices

# Instructions:

01 - Mix melted butter, minced garlic, lemon juice, Italian seasoning, paprika, onion powder, salt, and pepper in a bowl
02 - Preheat oven to 200°C/400°F and position rack in upper third of oven
03 - In a baking tray, arrange sliced onion and pepper strips in a single layer
04 - Place tilapia fillets on top of vegetables. Apply marinade generously on both sides of fish
05 - Place lemon slices on top of fish or around the baking tray
06 - Bake in upper third of oven at 200°C/400°F for 10-12 minutes until fish flakes easily with a fork
07 - Serve on a bed of rice alongside vegetables. Spoon leftover lemon butter sauce from the pan over the fish

# Notes:

01 - Can use other vegetables like asparagus or blanched beans
02 - Fish is done when it flakes easily with a fork
03 - For extra flavor, sprinkle with fresh herbs before serving
