Mix melted butter, minced garlic, lemon juice, Italian seasoning, paprika, onion powder, salt, and pepper in a bowl

Preheat oven to 200°C/400°F and position rack in upper third of oven

In a baking tray, arrange sliced onion and pepper strips in a single layer

Place tilapia fillets on top of vegetables. Apply marinade generously on both sides of fish

Place lemon slices on top of fish or around the baking tray

Bake in upper third of oven at 200°C/400°F for 10-12 minutes until fish flakes easily with a fork

Serve on a bed of rice alongside vegetables. Spoon leftover lemon butter sauce from the pan over the fish
