BBQ Chicken Cornbread Casserole (Printer-Friendly Version)

# What You'll Need:

01 - 1 pound ground chicken
02 - 1/2 yellow onion, chopped
03 - 1 green bell pepper, chopped
04 - 1 cup barbecue sauce
05 - 15 ounces tomato sauce
06 - 2 cups cheddar cheese, shredded

→ For the Cornbread Topping

07 - 1/2 cup yellow cornmeal
08 - 1/2 cup whole milk
09 - 1/2 cup flour
10 - 1/3 cup sugar
11 - 1/4 teaspoon salt
12 - 1 teaspoon baking powder
13 - 1 large egg
14 - 1/4 cup unsalted butter, melted

# Let's Cook!:

01 - Preheat oven to 400°F. Spray 9x9 baking dish with cooking spray.
02 - Cook ground chicken, onion, and bell pepper in large skillet over medium heat for 5-6 minutes until chicken is cooked through.
03 - Add barbecue sauce and tomato sauce to skillet. Bring to boil, then reduce to simmer for 5 minutes.
04 - In large bowl, whisk together cornmeal, milk, flour, sugar, salt, baking powder, egg, and melted butter.
05 - Layer chicken mixture in baking dish, then shredded cheese, and top with cornbread mixture.
06 - Bake for 30-35 minutes until golden brown. Let sit for 5 minutes before serving.
