Layered crispy tortillas with spiced beef, beans, cheeses, and fresh tomato and onion toppings.

# Ingredients:

Protein

01 - 1 lb ground beef

Seasoning

02 - 1 packet taco seasoning or 2 tbsp homemade taco seasoning
03 - ⅔ cup water

Tortillas

04 - 12 small flour tortillas (street taco size)

Beans & Sauces

05 - 2 cups refried beans
06 - 1½ cups enchilada sauce or taco sauce

Cheeses

07 - 3 cups shredded Mexican blend cheese
08 - 1 cup shredded cheddar cheese

Produce

09 - 2 Roma tomatoes, diced
10 - 3 green onions, thinly sliced

Oils

11 - 2 tbsp vegetable oil or cooking spray

# Instructions:

01 - Preheat the oven to 400°F (200°C) and line two baking sheets with parchment paper.
02 - Brown the ground beef in a large skillet over medium heat. Drain any excess grease.
03 - Stir in the taco seasoning and water. Simmer for 5 minutes until thickened.
04 - Lightly brush both sides of the tortillas with vegetable oil or spray with cooking spray.
05 - Arrange the tortillas on the prepared baking sheets and bake for 5–7 minutes per side, flipping halfway through, until crisp and golden.
06 - Heat the refried beans until easy to spread.
07 - Spread a layer of refried beans over six crispy tortillas. Divide the seasoned beef evenly over the beans. Top each with another crispy tortilla.
08 - Spread enchilada sauce evenly over each top tortilla. Sprinkle generously with the Mexican blend cheese and cheddar cheese.
09 - Bake for 8–10 minutes, or until the cheese is melted and bubbly.
10 - Remove from the oven and top with diced tomatoes and sliced green onions. Slice each into quarters and serve immediately while hot and crispy.

# Notes:

01 - Bake tortillas instead of frying for a lighter yet crispy crust. Warm refried beans before spreading to ease assembly. Avoid excess sauce to maintain crispness. Garnish with sour cream, guacamole, or salsa for enhanced flavor.
