Allow frozen dinner roll dough to thaw according to the package instructions until fully pliable.

Preheat oven to 375°F (190°C). Line a rimmed sheet pan with parchment paper and set aside.

In a large bowl, combine ground beef, onion powder, garlic salt, salt, ground black pepper, finely minced onion, and chopped dill pickles. Mix thoroughly to distribute seasonings evenly.

Divide the meat mixture into 24 equal portions. Cut the block of American cheese into 24 cubes, each about 1/2 inch. Flatten each portion of the beef mixture into a circle, place a cheese cube in the middle, and enclose the meat around the cheese to form a sealed ball.

Heat a large skillet over medium-high heat. Briefly brown the stuffed meatballs on all sides, turning as needed to develop a light crust while maintaining their shape. Do not cook the meat through.

On a lightly floured surface, roll out each thawed dinner roll into a circle just large enough to encase a meatball. Position a browned meatball in the center of the dough round, wrap the dough around it, and pinch the seam to seal firmly. Arrange seam side down on the prepared sheet pan.

Brush each dough-wrapped meatball with beaten egg over the top and sides, then generously sprinkle with sesame seeds.

Bake in the preheated oven for 18–20 minutes, or until the dough is golden brown and cooked through.
