Heat a large skillet over medium heat. Place each tortilla meat-side down in the skillet. Press down firmly with a spatula, starting in the center and working outward. Cook for 4 minutes, then flip. Top each with a slice of cheese and cook for 2-3 minutes until the cheese melts and the tortilla crisps up.

In a small bowl, whisk together ketchup, mayonnaise, sweet relish, finely diced onion, vinegar, black pepper, and paprika until smooth.
