Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

Slice pears in half lengthwise and remove cores with a melon baller or spoon. Place pear halves cut side up on the prepared baking sheet.

In a mixing bowl, combine crumbled blue cheese, toasted chopped walnuts, and 1 tablespoon honey. Mix until fully blended.

Spoon the cheese mixture into the center of each pear half, pressing gently to pack the filling.

Drizzle balsamic vinegar over the stuffed pears and sprinkle with ground black pepper. Bake for 20–25 minutes until pears are tender and cheese is bubbling.

Remove from the oven. Drizzle pears with additional honey and garnish each half with fresh thyme sprigs. Serve warm.
