Blueberry Lavender Vegan Madeleines (Print Version)

# Ingredients:

01 - 1 cup all-purpose flour
02 - ½ cup almond flour
03 - ½ cup granulated sugar or coconut sugar
04 - 2 tablespoons dried culinary lavender
05 - 1 teaspoon baking powder
06 - ¼ teaspoon salt
07 - ¾ cup almond milk or other plant-based milk
08 - ¼ cup melted coconut oil or other neutral oil
09 - 1 teaspoon vanilla extract
10 - 1 cup fresh or frozen blueberries

# Instructions:

01 - Preheat your oven to 375°F (190°C) and grease your madeleine pan with oil or non-stick spray.
02 - In a large bowl, whisk together the all-purpose flour, almond flour, granulated sugar, dried lavender, baking powder, and salt.
03 - In another bowl, mix the almond milk, melted coconut oil, and vanilla extract until well combined.
04 - Gradually add the wet ingredients to the dry ingredients, stirring gently until a smooth batter forms.
05 - Gently fold in the blueberries, taking care not to break them.
06 - Using a spoon or piping bag, fill each madeleine mold about three-quarters full with the batter.
07 - Place the pan in the preheated oven and bake for 15-20 minutes, or until the edges are golden, and a toothpick inserted comes out clean.
08 - Allow the madeleines to cool in the pan for about 5 minutes before transferring to a wire rack to cool completely.
