01 - 2 large sweet potatoes, peeled and diced into 1" cubes
02 - 5 strips of bacon, diced
03 - 1/4 cup olive oil
04 - 1/2 cup brown sugar + more for sprinkling

# Instructions:

01 - Preheat oven to 350°F. Line a baking sheet with parchment paper or tin foil
02 - Peel the sweet potatoes and cut into 1-inch cubes
03 - In a large bowl, add sweet potatoes and olive oil and toss to coat thoroughly
04 - Add diced bacon and brown sugar to the bowl. Toss again to coat sweet potatoes and distribute bacon evenly
05 - Spread the mixture evenly on the prepared baking sheet
06 - Roast in oven for about 30-35 minutes or until sweet potatoes are fork tender
07 - Remove from oven, transfer to serving bowl, and sprinkle with additional brown sugar before serving
