01 - 1 pound ground beef
02 - 1 teaspoon salt
03 - 1/2 teaspoon black pepper
04 - 1 teaspoon garlic powder
05 - 1/2 cup onion, finely chopped
06 - 1/4 cup pickles, diced
07 - 1/4 cup red/green bell peppers, chopped [optional]
08 - 1 cup cheddar cheese, shredded
09 - 12 egg roll wrappers
10 - 2 tablespoons mustard
11 - 2 tablespoons ketchup
12 - Vegetable oil, for frying
13 - 1 egg [optional for egg wash]

# Instructions:

01 - In a skillet over medium heat, cook the ground beef with salt, pepper, and garlic powder until browned. Drain any excess fat.
02 - Stir in the onions, cooking until softened. Remove from heat.
03 - To the beef mixture, add the shredded cheddar cheese, mustard, ketchup, and pickles, mixing until evenly combined.
04 - Lay out an egg roll wrapper on a clean surface. Place a heaping tablespoon of the beef mixture on the wrapper.
05 - Fold in the sides of the wrapper and roll tightly, sealing the edge with a bit of water or egg wash (if using).
06 - Heat vegetable oil in a deep fryer or large pot to 375°F (190°C).
07 - Fry the egg rolls in batches, turning occasionally, until golden brown and crispy, about 2-3 minutes.
08 - Drain on paper towels and serve hot with your choice of dipping sauce.

01 - Ensure the beef mixture is not too wet to prevent the egg rolls from becoming soggy
02 - For a lighter version, bake the egg rolls at 425°F (220°C) for 20-25 minutes, or until crispy, turning once halfway through
