Tender chicken, broccoli, rice, and cheddar come together in a flavorful baked dish.

# Ingredients:

Proteins and Aromatics

01 - 2 chicken breasts, diced
02 - 1 small onion, chopped
03 - 4 cloves garlic, minced

Seasonings and Oils

04 - 1 tablespoon olive oil
05 - ¼ teaspoon salt
06 - ¼ teaspoon black pepper

Grains and Broth

07 - ¾ cup uncooked white rice
08 - 10 ounces canned cream of chicken soup
09 - 2 cups low sodium chicken broth

Vegetables and Cheese

10 - 2 cups broccoli florets
11 - 1 cup shredded cheddar cheese
12 - 1 tablespoon fresh parsley, chopped

# Instructions:

01 - Heat olive oil in a large ovenproof skillet over medium heat. Add chopped onion and diced chicken. Cook for about 5 minutes until chicken is lightly browned and no longer pink. Season with salt and pepper. Stir in garlic and cook for 30 seconds until fragrant.
02 - Add uncooked rice, cream of chicken soup, and 2 cups chicken broth to the skillet. Stir to combine.
03 - Bring mixture to a boil, then reduce heat to medium. Cover and cook, stirring occasionally, for approximately 15 minutes or until rice is tender. Adjust seasoning to taste.
04 - Incorporate broccoli florets and half of the cheddar cheese into the skillet. Continue cooking for 2 minutes until broccoli softens slightly.
05 - Sprinkle remaining cheese over the top and place skillet under the broiler for a few minutes until cheese melts and develops a light golden crust.
06 - Decorate with chopped fresh parsley before serving.

# Notes:

01 - If rice appears too dry before fully cooked, add additional chicken broth incrementally to ensure proper cooking.
