08 - 1/2 cup Parmesan cheese, grated
09 - Butter or non-stick cooking spray, for greasing

# Instructions:

01 - Preheat oven to 400°F (200°C). Generously grease a mini muffin pan with butter or non-stick cooking spray to ensure easy release.
02 - In a large mixing bowl, combine chilled mashed potatoes, shredded cheddar, chopped chives, all-purpose flour, garlic powder, salt, and pepper. Add the egg and mix well until the ingredients are thoroughly combined.
03 - Use your hands or a small scoop to form the mixture into 1-inch balls. Roll each ball in grated Parmesan cheese, ensuring an even coating.
04 - Place coated potato balls into each cup of the prepared muffin pan. Gently press to mold them into the shape of the cups.
05 - Transfer the pan to the preheated oven and bake for 15–20 minutes, or until the edges are crisp and golden brown. Monitor closely to avoid over-baking.
