Cheesy Sausage Egg Wraps (Print Version)

# Ingredients:

→ Eggs Base

01 - 6 big eggs
02 - 2 tablespoons full-fat milk
03 - 0.25 teaspoon sea salt
04 - 0.25 teaspoon cracked black pepper

→ Inside Stuffing

05 - 1 tablespoon unsalted butter
06 - 4 breakfast sausages or 225 grams ground sausage
07 - 1 cup (100 grams) shredded cheddar or your choice of cheese

→ Tortilla Wraps

08 - 4 large wheat tortillas (about 20 centimeters wide)

→ Extras for Serving

09 - Salsa, green onions, or hot sauce to finish up

# Instructions:

01 - If you want them crispy, put your filled wraps seam-side down in a hot pan and press gently for a couple minutes each side. This way the cheese gets gooey and the outside turns golden. Dish up with green onions, salsa, or a splash of hot sauce if you like.
02 - Fold the tortilla sides in, then roll up from the bottom so nothing falls out and the filling stays put.
03 - Spoon eggs down the middle of each tortilla, then scatter sausage on top and finish with lots of cheese.
04 - Warm the tortillas up one by one—just a few seconds each side in a hot pan, or microwave for about 10 seconds until they bend easily.
05 - Melt your butter in the same pan, pour in the egg mix, and gently stir as it cooks so the eggs set but still look creamy. Pull off the heat right when they're done.
06 - Crack eggs in a bowl, add milk, salt, and pepper, then whisk everything until it all blends nicely together.
07 - Heat a pan on medium, toss in sausage links and turn now and then so they brown and cook through (about 8 to 10 minutes), or crumble up ground sausage and cook till it's all done with no pink left. Move sausage to a plate and keep it on standby.

# Notes:

01 - You can keep these wraps in foil in the fridge for up to 3 days and just heat them up when you're ready to eat.
02 - For long-term storage, wrap them tight in plastic and foil after they cool, then freeze up to 2 months. Thaw them in the fridge overnight and give them a good reheat before biting in.
03 - Toss in chopped veggies like spinach or bell peppers to make them even better for you.
