Cheesy Taco Bell Fries (Print Version)

# Ingredients:

→ Fries

01 - Vegetable oil, enough for deep frying
02 - 450 g frozen, extra-crispy French fries, fast-food style

→ Seasoning Mixture

03 - 0.25 teaspoon cayenne pepper if you want more heat
04 - 1 teaspoon onion powder
05 - 2 teaspoons chili powder
06 - 1 teaspoon garlic powder
07 - 2 tablespoons paprika
08 - 2 teaspoons fine salt

→ Cheese Sauce

09 - 1 tablespoon pickled jalapeño brine
10 - 60 ml whole milk
11 - 16 slices American cheese, processed type

# Instructions:

01 - Put those hot, seasoned fries on a platter, and dunk 'em in the cheesy sauce. Pass it around while everything’s nice and warm.
02 - Pile the fries into a big bowl and sprinkle over the spice mix you made. Toss well so every fry gets coated.
03 - Tear the cheese slices into small bits. Throw cheese pieces, milk, and jalapeño brine into a microwaveable bowl. Microwave uncovered, 30 seconds at a go, stirring until it’s all melted and super smooth.
04 - Pop those frozen fries into the hot oil. Fry them up for about 6–8 minutes 'til they’re golden and crunchy. Use a slotted spoon to lift them out and drop them onto a plate lined with paper towels.
05 - Fill your deep pan with oil deep enough to cover the fries by at least three inches. Bring the oil up to 180°C before starting.
06 - Dump all your spices—cayenne, onion powder, chili powder, garlic powder, paprika, and salt—into a small bowl. Stir them up really well.
