In a medium saucepan over medium heat, combine chopped cherries, minced chipotle peppers, adobo sauce, lime juice, apple cider vinegar, and salt. Stir occasionally and bring to a gentle simmer.

Continue simmering the mixture for about 10 minutes, until the cherries soften and release their natural juices.

Stir in the fruit pectin and bring the mixture to a rolling boil, stirring constantly to activate the thickening agent.

Add granulated sugar gradually while stirring. Return to a full rolling boil and cook for 1 to 2 minutes until the mixture slightly thickens.

Remove from heat and skim off any foam from the surface. Let the spread cool slightly before transferring to sterilized jars. Cool completely before sealing and refrigerating to allow thickening.
