# Ingredients:

→ Fruit

01 - 3 cups fresh or frozen cherries, pitted and chopped

→ Peppers and Sauces

02 - 1 to 2 chipotle peppers in adobo sauce, finely minced
03 - 1 tablespoon adobo sauce (from the can)

→ Sweeteners and Acidulants

04 - 1 cup granulated sugar
05 - 2 tablespoons fresh lime juice
06 - 1 tablespoon apple cider vinegar

→ Thickeners and Seasonings

07 - 1 packet (1.75 oz) fruit pectin
08 - 1/4 teaspoon salt

# Instructions:

01 - In a medium saucepan over medium heat, combine chopped cherries, minced chipotle peppers, adobo sauce, lime juice, apple cider vinegar, and salt. Stir occasionally and bring to a gentle simmer.
02 - Continue simmering the mixture for about 10 minutes, until the cherries soften and release their natural juices.
03 - Stir in the fruit pectin and bring the mixture to a rolling boil, stirring constantly to activate the thickening agent.
04 - Add granulated sugar gradually while stirring. Return to a full rolling boil and cook for 1 to 2 minutes until the mixture slightly thickens.
05 - Remove from heat and skim off any foam from the surface. Let the spread cool slightly before transferring to sterilized jars. Cool completely before sealing and refrigerating to allow thickening.

# Notes:

01 - Adjust heat by tasting before adding sugar; finely mince chipotle for even flavor distribution. For a smoother texture, partially puree with an immersion blender prior to jarring. Refrigerate up to three weeks or process in a water bath for extended shelf life.
