Chicken Burgers Avocado Corn Salsa (Print Version)

# Ingredients:

→ Chicken Patties

01 - 1 1/2 pounds ground chicken thighs
02 - 2 scallions, finely chopped
03 - 1 cup shredded cheese (Cheddar, Gouda, or Provolone)
04 - 1/4 cup mayonnaise
05 - 1/2 teaspoon salt
06 - 1/2 teaspoon ground black pepper

→ Avocado Corn Salsa

07 - 1 large avocado, sliced
08 - 1 ear fresh corn, kernels removed
09 - 1/8 cup chopped fresh cilantro
10 - 1/2 tablespoon olive oil
11 - salt and black pepper, to taste
12 - 1/2 lime, juiced

# Instructions:

01 - Place ground chicken, shredded cheese, scallions, mayonnaise, salt, and black pepper into a medium mixing bowl. Mix thoroughly until evenly combined.
02 - Measure out 1/2 cup portions of the chicken mixture and shape into even, round patties.
03 - Cook patties on an outdoor grill or grill pan over medium heat for about 5 minutes per side, or until fully cooked through.
04 - While the patties are grilling, use a sharp knife to remove kernels from the corn cob. Place corn kernels, sliced avocado, and cilantro into a mixing bowl. Drizzle with olive oil and lime juice, season with salt and black pepper, and combine gently.
05 - Top cooked chicken patties with the avocado corn salsa and serve immediately.
